Peri Peri Mayo Potatoes

INGREDIENTS
7 small potatoes or 15 baby potatoes
Impresso's Premium Peri-Peri mayonnaise
3 Tablespoons
Cooking oil
2 Tablespoons
Corriander for garnish
STEPS

Boil the potatoes. You can use a pressure cooker as well.

Cut the potatoes into small bite sized pieces (Peeling the skin is optional)

Heat oil in a pan, add potatoes and toss well in the oil. The aim is to create a crispy layer

Transfer this to a large bowl and let it cool.

Finally, add Impresso's Peri Peri mayonnaise and mix well!
Garnish with some coriander
